Chicken Salad

Happy Friday! I haven't done a foodie post in so long and I feel like that's weird, considering my identifying characteristic is that I'm always eating. I love chicken salads, which is something that not a lot of people know about me until I force them to drive around the city looking for a restaurant that makes chicken salads with shredded chicken...



But there's absolutely no place like home, (or Superstore) and I don't think any restaurant chicken salad can compare to a delicious homemade one. So, I gathered up my PC points and made an extremely simple, but delicious chicken salad with the best in the food game, +Presidents Choice.

Ingredients:

- Chicken Breast (Cooked + SEASONED)
- 2-3 Lettuce Leaves
- 1/4 of a Cucumber
- 1/8 of a Red Onion
- 1/2 Tomato (or Cherry Tomatoes)
- PC A NEW WORLD EVOO EXTRA VIRGIN OLIVE OIL
- White Vinegar
- Freshly ground pepper
- Salt

Optional:
- Cheese
- Croutons
- Caesar/Other Dressing

I like to keep my chicken salad simple. Not a fan of cheese & chicken, so I make a basic salad and just add chicken to it. Doesn't seem like much of a difference, but if you season your chicken right.. it'll blow your mind.

COOK YOUR CHICKEN FIRST!

Chicken Seasoning Ideas:
- Garlic / Salt / Pepper / Oregano
- Seasoning Salt / Pepper / Garlic / Onion Powder
- Garlic / Pepper / Seasoning Salt / Paprika / Sriracha (if you're into spicy)
- Seasoning Salt / Pepper / PC Chipotle Hot Sauce

(I don't measure my seasonings, so everything is literally 'to taste')

Once your chicken is cooked, set it aside and make your salad.

WASH & CUT ALL YOUR INGREDIENTS.

My cookbook terminology isn't quite up-to-date, so I explain the cuts in relation to objects, so pay attention.

Salad: Just slice it, really. I don't think it matters.
Tomato: (If you used actual tomatoes and not cherry tomatoes) Slice half the tomato and then cut those in half (not diced. like, triangles.)
Cucumber: Cut it, cut that in half, and then slice it. (Like half moons.)
Onions: I don't even know, just cut it.

Literally,

 CUT ALL YOUR INGREDIENTS (EXCLUDING THE CHICKEN) AND PUT THEM IN A BOWL.


I go a little crazy on the cucumber. Cucumber and chicken is a really delicious combination to me. You don't need to load your salad with cucumbers.





Add olive oil and vinegar. I'd say around a tablespoon of olive oil and a 1/2 tbsp of vinegar.
Add salt and freshly ground pepper to taste.
SHRED YOUR CHICKEN.


Use a fork and glide it along your chicken breast to shred it. Add this to your bowl and mix it in.


And there you have your delicious chicken salad.
